Freezer Meals for the New Year (Round #3)

It's that time of year again in our house, time for some freezer meals! In the last year, we have tried to change a lot about what we eat in our home. Our goal has been to cut out as much processed food as possible and focus on eating whole fresh foods. Do we do this all the time? Nope. Do we eat 100% clean? Nope. I read a blog not too long ago that talked about eating clean 85% of the time and I loved that, because it's unrealistic for our family to think we are going to eat 100% fresh/not processed food for a few reasons… finances, access to fresh foods, and being social (community group, potlucks, church, etc). 

Here's a few recipes that we are trying this time! The only ones we've tried before are the Taco Chicken Bowls, Zucchini Chicken Alfredo (our fav), and Chili. The other recipes are newbies, so don't kill me if they're not your favorite! We can try them together ;) I'll post reviews on this blogpost once we've gotten through all the new recipes!

The thing I try to remember is that you can substitute things to make almost anything with whole/fresh foods! I substituted all the canned foods (tomatoes, etc) for fresh and diced it myself! Anything you can't buy fresh or frozen that you have to buy canned (like beans), buy organic! I also made a batch of homemade salsa for any recipes that needed that! 

I doubled most of these (except the curry because I wanted to make sure we like it first) and we have 13 freezer meals now! It took me an hour and 35 minutes to finish prepping 13 meals. Totally worth it y'all! :) Enjoy!

My review: This was delicious!! Trevor doesn't normally love "citrus" flavored things but even he loved this! :) 

Thai Chicken Massaman Curry 

My review: This was also great! I only made one because I wasn't sure how it would come out. We liked it! It's probably not a meal we would make regularly but it was nice to try something new! I didn't make the slaw part because hubby is not into slaw, so I bet it would be even better with that added! 

Fiesta Chicken Soup

My review: I thought this was decent but Trevor LOVED it! He constantly asks for me to make this one now! It has a nice little kick too (which is probably why I don't LOVE it like he does, because I'm a wimp ;)) 

Zucchini Alfredo Sauce (with chicken)

My review: This is a staple in our house now! We never make regular alfredo anymore and Trevor & Landon both love it! :) It's a super healthy meal with great taste!

My review: This is a great chile! Hubs is pretty picky about chile and he likes this one!

Beef Fajitas

1 lb round steak (sliced into strips)
Bell peppers
Onions

Add any veggies you like in your fajitas and season it once in the skillet! I just thaw it out the night before and dump it in the skillet a few minutes before dinner :) 

My review: Fajitas are fajitas! You either like them or you don't! I love them, Trevor not so much…so I make them every once in a while. He did enjoy the beef more than the chicken though since we eat chicken ALL THE TIME. ;)

Summer Crockpot Recipes

So y'all know how much I LOVEEEE my crockpot and honestly, I've been missing it this summer, but seriously… who makes recipes full of creamed soups in the summer? Not people in Mississippi ;) 

This week I found several summer crockpot recipes to try and I wanted to share the ones we tried and LIKED, I never share the "flops". As a lot of you know, Trevor gives all of my new recipes a rating…1 through 10, 1 being AWFUL...10 being amazing :) So…if hubby gives it a rating of below 7, you'll never see it ;) Sometimes they just need a few changes, but otherwise, they don't make it in the recipe box! 

Here's a few we liked this week: 


Mexican Tortilla Pie
(I forgot to take pics this week and while I DID get it out of the
 crockpot intact, it did NOT look quite this lovely)


Ingredients: 

1 (16 oz) can refried beans
1 cup picante sauce or salsa, divided
2 garlic cloves, minced
1/4 cup fresh cilantro
1 (15 oz) can black beans, rinsed and drained
1 tomato, diced
7 medium whole wheat tortillas
2 cups grated cheddar cheese
Salsa, sour cream and extra cilantro for toppings

Instructions:

1) Combine the refried beans, 3/4 cup of salsa and garlic in a small bowl
2) In another bowl, combine 1/4 cup of salsa, cilantro, black beans and tomato.
3) Take 2 long sheets of aluminum foil and make a foil sling.  Place in a 5 or 6 quart slow cooker.  Spray the foil with non-stick cooking spray.
4 Take one tortilla and spread 1/4 of the refried bean mixture over the tortilla (leave about 1/2 inch of space around the perimeter).  
5) Place it in the slow cooker.  
6) Sprinkle 1/4 cup cheese over beans.  Top it with another tortilla.  Spoon 1/3 of the black bean mixture over the tortilla.  Sprinkle 1/4 cup of cheese over the black beans.  Top it with another tortilla.  Repeat layers.  You'll end with refried beans on top.  Sprinkle with  remaining cheese. 
7) Cover and cook on LOW for about 4-5 hours (depending on how hot your slow cooker cooks) or about 2-3 hours on HIGH. 
8)Use the overhanging edges to gently pull out the dish intact.  Transfer to a serving platter.  Slice and
serve with sour cream, salsa and cilantro.

My reviewThis recipe was delicious! I think I would add a little more tomato next time to give it a bit more flavor. I used a homemade salsa in it which I liked for a bit of a kick! 



Skinny Crockpot Alfredo Sauce


Ingredients

1 lb boneless, skinless chicken breasts 
4 small zucchini, peeled and cut into quarters (3 large zucchini would be perfect) 
3 large garlic cloves, minced
2 tsp olive oil
2 tsp chicken bouillon (I used 1/2 a cube) 
3/4 cup water
Salt and pepper to taste
Garlic powder to taste
1 Tbsp cornstarch

Instructions

1) Place chicken in the bottom of the slow cooker 
2) Place zucchini on top of the chicken and then sprinkle in the garlic, olive oil and bouillon.
3) Pour water over the top of everything and cover.  Cook on HIGH for 3 hours or on LOW for about 6 hours. (I cooked on HIGH for 3 hours)
4) Remove chicken and place on a cutting board and cut into bite size pieces or shred.  
5) Pour the remaining contents of the slow cooker into a large blender.  Blend until creamy and smooth.  Pour back into the slow cooker.  Salt and pepper to taste
6) In a small bowl combine the cornstarch and 1 tbsp of cold water.  Stir until smooth and creamy.  Add the cornstarch mixture into the slow cooker and stir in.  Add the chicken back in.  Turn to high and cook for about 10 minutes with the lid off until the sauce thickens up.  
7) Serve sauce and chicken over fettuccine noodles or over whole wheat spaghetti.

My review: I was SO skeptical about this recipe guys! I had NO idea how a zucchini could turn into a creamy alfredo sauce, but it DID! And it was delicious. My "meat and potatoes" hubby liked it and I was nervous if it was going to pass his test! ;) I used 2 large zucchini and next time I will use THREE instead to make sure there is plenty of sauce! 




Chicken Caesar Sandwiches 



Ingredients

1 lb boneless skinless chicken breasts
1 lb boneless skinless chicken thighs (I did not use this, I just used the 1lb breasts)
2 cups water (I used 1 cup water) 
1 tsp Shirley J chicken bouillon or 2 tsp regular chicken bouillon granules
1/2 cup Parmesan cheese
2 tsp dried parsley
Salt and pepper
1/2 to 1 cup Caesar dressing
Lettuce
Buns, rolls, or some type of bread to serve the sandwiches on (I used whole wheat tortillas for a wrap) 

Instructions

1) Place chicken in slow cooker and top with water and bouillon.  Cover and cook on LOW for about 4-6 hours.
2) Remove chicken and place on a cutting board.  Shred the chicken or cut into small chunks.  
3) Drain the liquid from the slow cooker and discard.
4) Place chicken back in the slow cooker and top with dressing, parmesan cheese, parsley, salt and pepper to taste.  Stir until combined.
5) Serve chicken over bread and top with lettuce.

My review: This was one of my hubby's favorites! I didn't have time to cook on low for 4-6 hours, so I cooked the chicken on HIGH for 3 hours. I also made it in the evening and then refrigerated it overnight and served it as a cold chicken salad the next day :) Hubby toasted bread and ate it on a sandwich and I used a whole wheat tortilla and made a wrap! It was delicious! I only used the 1 lb of chicken breasts because there are only three of us and we don't need that large of portions! I kept the caesar dressing as 1 cup even with less chicken to make sure it wasn't too dry! 


Sour Cream Chicken Tacos


Ingredients 

1/2 cup diced onion
1/2 cup diced red bell peppers
1 tsp cumin
1 tsp chili powder
1 Tbsp canola or vegetable oil
1 Tbsp tomato paste

8 boneless, skinless chicken thighs
1 (13.75 oz) can cream of chicken soup
2 Tbsp quick cooking tapioca (I substituted corn starch for this)

1 (4 oz) can diced green chile peppers
1/2 cup sour cream
Salt and pepper

Instructions

1) Place chicken in bottom of slow cooker.
2) Combine onion, peppers, cumin, chili powder, oil and tomato paste in microwave safe bowl. Microwave for 4-5 minutes, stirring every minute until onions are soft. Add in the soup, tapioca (or corn starch) , green chile peppers. Pour over the chicken.
3) Cover and cook on LOW for 4-6 hours. Chicken should be to the point where you can easily shred it. Take 2 forks and shred the chicken and then return to the slow cooker or use your standing mixer.

4) Stir in sour cream and then salt and pepper to taste.
5. Serve shredded chicken wrapped up in tortillas as tacos (or however you want to serve it).

My review: This recipe was great too! It is definitely a "mushy" type taco filling, but it was delicious and Landon LOVED it. He ate it for 3 days because he loved it so much! So that's a WIN when you're 14 month old loves it too <3

Living in the moment

What does it look like to truly live in the moment in our society? I've been asking myself this a lot lately & I've just been feeling super overwhelmed and I can't articulate why. Last night Trevor and I were laying in bed and I was trying to explain why I was feeling overwhelmed and I couldn't. After talking to my honey for a couple hours, I think we figured it out... I feel like I'm constantly living in information overload and it's absolutely because of how connected I am to the world (via the internet!) Hear me say this...I LOVE my iPhone. I love the fact that I can jump on and look something up that I need, I love that when we are in the car I can pull up maps, places to stop and eat, etc. I love that I have an app that keeps track of breastfeeding/pumping info. I love that I have an app that is a sound machine and it helps put my boy to sleep no matter where we are. I absolutely love it. I love that I can post millions of pics of Landon so our friends/family that are far away can see him. But I also hate it. I hate that I feel like it's sucking the life out of me. I hate that I feel like I need to have it next to me all the time when I'm in the house. It's like an extension of our bodies... like an arm, leg, etc. Ridiculous!! How did we get to this place as a culture?? I hate that we make a Facebook event for a girls night & then when we actual go out for that girls night, half (or all) of the table has their phones out and are on Facebook browsing instead of actually spending time together. I feel like we are losing the ability to live in the moment with one another.

I've been feeling this tug for several months since Landon was just a few months old and I feel it even more strongly now. I want to be a wife who is present and a mom who is present and a friend who is present. I don't want to constantly be looking at my phone when I could be spending time with my family...but even a step further, I don't want my mind to be so overloaded by what I've read online all day, that I can't enjoy the moments together. The last few months I have made an effort to not have my phone next to me throughout the day, but instead, to put it on the charger for a couple hours at a time so I'm not tempted to "peek" at it every so often, when I should be playing or loving on my boy. On Friday last week, I intentionally decided not to respond to anything online the first few hours after waking up (3-4 whole hours...pathetic huh?) and I noticed a huge difference in my day! I turned on music, played all morning, went to an appt, had lunch made for Trevor when he came home, and just felt FREE. 

I can tell you that since trying to put my phone away for a few hours at a time, there HAS been a cost... Grandma & Gigi don't get as many pics of bug, I miss calls and texts from my friends/family from home, and I may not be immediately available anymore. It used to break my heart to think of grandparents not getting daily pics of Landon or spending the day texting with my best friends from home... but it doesn't anymore because my husband and my son are As a mama, I need to be focused on the moments that are right in front of me while I'm home with bug during the day and I know that our family/friends understand that. It's so easy for us stay at home mamas to get sucked into chatting all day while our husbands are at work & then being "committed" to putting our phones away at night to spend time with our family. That is AWESOME, but it's not enough...we need to give our children that same attention. If I am choosing to stay home with Landon, I am responsible for meeting all of his needs, loving on him, and being intentional about TEACHING him throughout the day. I can't be focused in doing that when I am constantly checking in one stuff online or even thinking about something I read earlier. This weekend I decided to delete the Facebook messenger app because it's just one more way for me to communicate with the world that's not necessary. I already can call and text...I don't need another way! It's so easy for ME to spend the day chatting with other mamas who are also home doing the same things Landon and I are, but that means that I'm not only taking time away from being focused on my child, but I'm also taking their focus away from their children! 

So, does that mean I'm deleting my Facebook? No. Because I do use Facebook for a lot of good things... staying connected with our community around us here and our friends/family from home. I simply am going to be much more aware of my time, how I'm spending it, and doing things (like deleting FB messaging on my phone) to live more in the present that are eternally focused. I want to get back to more one on one time with friends here too, things that are not big planned events. Having meaningful conversations about life, faith, marriage, parenting, etc over a cup of coffee or on a walk with the kiddos on a pretty day. 

Mama friends, I write this because this is something that I personally struggle with... will you come alongside me & take the challenge WITH me? <3

Life update -- Our first full year in Biloxi

The beginning of my last post started by talking about how I hadn't blogged in forever & was finally sitting down to do so because I missed it. Then it was gone (I hit publish and it got deleted...) Ughhhhh. So here we go again!

I have really missed blogging. It's therapeutic for me to write, even if no one reads it. I'm hoping to get back into blogging regularly about what God is teaching me, marriage stuff, mommy stuff, etc. 

2013 was our first full year at Keesler AFB & it flew by, but not because our life is too BUSY here. When we were at Fort Hood, Trevor was gone all.the.time. Iraq, Haiti, TDY's, Afghanistan...you get the point. Even when he was home, life just felt like it went a million miles an hour because we were so busy. I was working full time, he was doing army support, and we always had a ton of things going on. A ton of good things with our amazing friends that we miss dearly. They are lifelong friends though and we still talk to them & always will! We lived our first 2 years of marriage with them, celebrated with them, grieved deeply with them, and survived deployments with them. With all that being said, God had a big reason for us to leave that place & come to Keesler AFB & has already blessed us with incredible friendships just in the last year. 

One of the reasons Trevor applied to become an instructor here at Keesler was so that we could focus on our family and in order to do that, we needed some time home together
I am so very thankful God sent us here! Do I LOVE mississippi? Nah... not really :) BUT, I love our life here as a family and that's what I'm thankful for. Our sweet boy was born here on June 1, 2013, so Mississippi will always have a special place in our hearts. Trevor has a set schedule working Mon-Fri as an instructor & is home every other Friday & for lunch and dinner most days. Literally, I never thought my husband would be home for lunch and dinner ever. It feels too good to be true most days because our married life just has never looked like this. To my friends who's husbands are deployed or you have a husband who can't be home due to his work schedule...I feel for you and I know it is HARD. I pray that your family will have relief and good quality time together in 2014. 

Since Landon was born, I have become a stay at home mama which I absolutely love. I cannot think of anything else I would rather be doing right now. I have people say "Don't you ever have the itch to go back to work?!" My response is always the same... Nope, not at all. We decided before Landon was born that I would stay home with our kiddos until they go to school & I'm so thankful that we are able to make that happen, it truly is a blessing that I don't take for granted because I know there are so many mamas who wish they could. I also have friends who love being a working mom and feel that they are a better mama to their kids because of it! I think it's a personal choice for each family. I am working PRN at a hospital here on the coast to keep my license current & I usually work 1-2 days per month on Fridays that Trevor can be home with Landon. It's a perfect job for a stay at home mom! 

As much as I miss our friends from Fort Hood, we have made wonderful friends here & I know that we will grow even closer over the next few years. And we're not replacing any friendships, just adding new ones...one of my favorite things about being a military family! :) We have an amazing church here & we recently started a new community group in our neighborhood in base housing & the relationships in it have been such a blessing to us. They truly are becoming like family :) I'm so excited to spend the next 3ish years with these friends & watch our kiddos (those who have them) "grow up" together. We will move when Landon is 3... When you're a military family, having friends for your kids for 3 straight years is like a lifetime! 

Our little bug is SEVEN months old already, I have no idea where the time went. It feels like just yesterday I was pregnant and we were moving here! He is such a JOY to be around and smiles all the time! Well...unless he's hungry, tired, or teething ;) I have to throw a picture in here because it's what mommys do! He smiles & laughs at everyone, he sits up on his own, and just started rolling from one end of the living room to the other <3 Crawling is coming soon & this mama is about get BUSY chasing him around the house!

I pray that 2014 is just as much of a blessing as 2013 was for our family. I can't imagine a better year, but God never ceases to amaze me with his blessings <3
